Well Sunday Assassin is just a term for someone who kills some of the time but more as a side line than any real profession, Donald Sutherland's line in Italian Job sums it up quite nicely, "There are those who steal to enrich their lives and those who steal to define them." My character takes out contracts just for the adrenaline rush he gets for going on paid killing sprees, don't get me wrong though that he's a fop, he is quite professional when he does his job its just that it does not rule his life in the same way it does define say Artemis Enteri from Forgotten Realms or Chow Yung Fat's character in Replacement Killers, to him the job and being the best isn't the end in itself, its the fun, places you visit and the people you meet that counts. Anyway his day job is his cafe first and foremost though he doesn't conceal the fact that he's a killer for hire.
In the case of the DNPCs, I think your definition kind of cuts down their number but he will still have a few, mostly kids who hang out in his cafe who's welfare he personally takes an interest in especially since his cafe is located on the border of Wan Chai and Central, a pair of orphans who work as waiters and some elder patrons as well as some of their family members. He has this bull dog complex in that he adopted the area his cafe is located in as his home turf and rabidly defends it against any Tongs and Triad mooks that come to distrub the peace this of course has done little to endear him to any of the local crime lords. His cafe is also where his co-workers from Kagura and other assignments tend to hangout.
Professionally, his main line of work is contract based like the Black Company which he recieves through Kagura Securities Hong Kong division, he prefers offensive contracts to defensive ones and hunt and kill versus capture though he won't pass up a bounty if its fat enough. He works solo and doesn't like splitting bounties.
